Step 1 - Wash the goat in cold water and then place it into a plastic container with the lemon juice and ensure that it is thoroughly mixed through. Leave for five minutes and then rinse off.
Step 2 - Place the goat, oil, 2 tablespoons of curry powder, rosemary, thyme, ginger and onions into the plastic bowl, cover and marinate in the fridge for at least two hours. Take the goat out of the fridge 30 minutes before you go on to the next stage of cooking.
Step 3 - Put four tablespoons of water into a pan and add the sugar. Place on a medium heat and dissolve the sugar.
Step 4 - Put the goat mixture into the pan and add the remaining 2 table spoons of curry powder, mix well.
Step 5 - Keep on adding water 100ml at a time as you cook the curry over a medium heat for two to three hours. This will keep the goat nice and tender.
