Ingredients for the pastry:

  • 175g plain flour
  • salt
  • 75g butter (plus extra for greasing)
  • water



  • 200g cheese.  Mature cheddar is good but I usually make this  quiche to use use up scrap ends of cheese.
  • 2 medium sized onions
  • 5 eggs
  • 200 ml double...
