I have made this recipe two ways, once as a mash and once as a puree.  Both work well and it really depends on the consistency that you require.

 

Ingredients:

 

  • 225g potatoes
  • 450g celeriac
  • 1 clove of garlic
  • 25g butter
  • 75ml creme fraiche
  • seasoning

  • 2 tablespoons of oil
  • 1 large knob of butter
  • 6 large leeks
  • 6 new potatoes chopped into bite sized chunks
  • 1 litre of vegetable stock
  • 100+ ml of semi skimmed milk
  • Seasoning
